Pumpkin Pie Smoothie

Description

This is a tasty low-calorie, high flavour treat which you can enjoy for breakfast or as a dessert.


Ingredients

In a blender:

1 cup roasted pumpkin, frozen

1 banana, frozen

1 cup almond milk

4 tablespoon rolled oats, toasted in pan

1 teaspoon vanilla essence

2 tablespoon maple syrup

1/2 teaspoon mixed spice (cinnamon, nutmeg, cloves)

1/8 teaspoon salt

For garnishing:

Sprinkle of cinnamon sugar

Handful pumpkin seeds


Instructions

Roast a medium sized pumpkin (cut in half & seeds scooped out) in the oven at 200°C for 15-20min or until fork tender. 

 

Allow to cool before scooping out the flesh into a tupperware. Keep in the freezer until ready to use. 

 

Take out your frozen pumpkin and banana and allow to defrost for a few minutes. Meanwhile, in a pan with a drizzle of olive oil, toast the oats until golden brown. Set aside to cool.

In a good blender, dish out one scoop of pumpkin, a frozen banana and all the other ingredients listed above. Blitz until smooth. Serve in a tall glass and garnish with cinnamon sugar and pumpkin seeds.
